  1. Mix Rub

    Mix all seasonings well in a bowl with a fork or a small whisk.

Day Before Preparation

  1. Trim and prepare

    If not already done by the butcher. While the brisket is cold, Trim the fat off the top of your brisket. You do not want much fat left on the top, so the Rub you put on will soak into the meat, giving you a beautiful colour and bark when done. Next, trim your brisket to 1/8" - 1/4" along the bottom. 

  2. Apply the Rub to the brisket, then wrap it in saran wrap and put it in the fridge.

  1. How to Cut Your Brisket

    Cutting the brisket is a significant part of 

    Before cutting the brisket, it has to rest for at least 20 minutes. The temperature should be 175 F before slicing. 

  2. Remove brisket a couple of hours before smoking to allow the meat temperature to rise to room temperature.
  3. Get the smoker ready to 225 F. I use a Traeger BBQ smoker because it can be used for various things.
  4. Once the smoker is at temperature and smoking, place your meat on the grill fat side down and rub side up. I use hickory or cherry pellets, but you can use any flavour.

There are two stages to this smoke:

  1. Stage 1: Smoke brisket low and slow for 6 hours. Once the internal temperature reaches 155-165 F, you have reached the 'Stall' stage. 
  2. Stage 2: The Wrap. You can use foil or butcher paper; I use a double wrap of foil in either case. Once you lay the brisket in the foil, pour 2/3 cup of apple juice around the base of the brisket. (Do not pour the apple juice over the brisket and wash the rub off; it's not a turkey!).
  3. Once the brisket is juiced and wrapped, put it back on the smoker until the internal temperature is 201-209 F. Take off the smoker and let it rest wrapped for at least 30 minutes or until the internal temperature reaches 165-170F.  It is your choice to unwrap or not after 30 minutes.
